Our Artisan Bread Theory course explores the science behind artisan bread-making methods. Study different bread formulas and how elements like ingredient selection, water chemistry, proofing time, humidity, the effects of milling and other environmental factors can yield vastly different results. Also consider the theory behind shaping, proofing and baking techniques.
